In the Kitchen

Exceptional in stir-fries, chili, spicy pasta, and any dish where garlic is meant to be noticed. It pairs well with bold flavors like cumin, chili, ginger, and black pepper. Also good used sparingly in aioli or compound butter when you want heat without reaching for hot peppers.

Growing

A Porcelain hardneck with strong cold hardiness (zones 3 to 7). It produces scapes in spring. Remove them for larger bulbs. Plant October to November, harvest July to August. One of the most reliable producers in cold, wet climates like Oregon's Willamette Valley.

Storage

Stores 6 to 8 months in a cool, dry, well-ventilated space. Like all Porcelain types, Georgian Fire cures and keeps well.
