This was Donostia's first season on our farm. We planted some of the smallest cloves available — seed stock that by conventional standards would not be worth the bed space. The bulbs we harvested had doubled in size compared to what we procured the prior fall. Tight wrappers across the board. Every clove produced.
Donostia took hardneck grand champion in our 2026 harvest. For a first-year planting started from inferior seed stock, the return on investment was unlike anything we have seen from a new variety. It joins Music as a farm favorite going into next season.
The Hardneck for Growers Who Were Told They Couldn't Grow Hardneck
Most hardneck garlic needs a sustained cold period to vernalize. In zones 6 through 9, winters are too mild for most hardneck varieties. Donostia Red Creole is different. Creole garlic evolved in warm climates and tolerates mild winters far better than Porcelain, Rocambole, or Purple Stripe types. It performs well in zones 5 to 9, with particular strength in zones 6 to 9.

Inchelium Red won a national garlic taste test judged by Rodale Kitchens, and it remains one of the most decorated softneck varieties in American garlic growing. What Makes Inchelium Different
Most softneck garlic is mild because it lacks complexity. Inchelium Red is mild because it has been selected for sweetness and depth rather than heat. Raw, it has a gentle bite that disappears quickly. Roasted, it becomes almost buttery.
On our farm, we ran an intentional experiment with Inchelium in 2025: one row planted with our largest cloves, one row with our smallest. The small-clove row produced bulbs the same size — many reaching three inches across. Inchelium overachieves in mild winter climates in a way that defies the standard rules.

Inchelium Red does not require vernalization the way hardnecks do. It thrives in mild winters. Growers in the South, the Pacific Coast, and the lower Mid-Atlantic who have tried hardnecks and been disappointed will find Inchelium a different experience entirely.

2026 Harvest Results
Music is in its fifth season on our farm and it keeps improving. Each year the seed stock adapts a little more to our Willamette Valley soil and conditions, and the results show at harvest. The bulbs are consistently large, the wrappers tight, and the yields reliable regardless of what the season throws at it. Music took first place hardneck in our 2026 harvest and is one of two farm favorites heading into next season.

Flavor

Donostia Red Creole (1/4 lb) — A rare Creole hardneck from the Basque region of Spain. Multiple major seed operations limit Donostia to 1 lb per customer because supply is so constrained. We grew it for the first time in 2026 and it took hardneck grand champion on our farm. Planted from tiny cloves, bulbs doubled in size compared to what we procured the prior fall. Bold, spicy heat that mellows into something rich and complex when cooked. Stunning magenta-streaked cloves. Stores 9 to 10 months.
Georgian Fire (1/4 lb) — A rare Porcelain hardneck from the Republic of Georgia. One of the hottest garlic varieties available, with clean, deep heat and high allicin content that holds up through cooking. Large cloves, striking tan skin with maroon streaks. Cold hardy in zones 3 to 8. Stores 6 to 8 months.

Planting

Ukrainian Red is the garlic for cooks who go through a lot of it. This Rocambole hardneck is known for how easy it is to peel. The papery outer skin slips off cleanly, revealing large, deep-colored cloves that are genuinely a pleasure to prep.
Flavor
Classic and robust with a mellow, earthy heat that builds gradually. Ukrainian Red has a depth of flavor that grocery store garlic simply cannot match. Complex without being aggressive, satisfying without being sharp.
In the Kitchen
Outstanding for roasting. The large cloves caramelize beautifully and the flavor deepens into something almost nutty. Also excellent for sauteing, stirring into sauces, or pressing raw into dressings.
Growing
Ukrainian Red does best in cold winters (zones 4 to 7). Like most Rocamboles, it needs a strong vernalization period and performs best in drier winters; it can be a little more finicky in unusually wet conditions. Storage
Stores 4 to 6 months in a cool, dry, well-ventilated space. Rocambole varieties have thinner, looser skins than Porcelain types, handle with care and use within the storage window.
