Ukrainian Red is the garlic for cooks who go through a lot of it. This rocambole hardneck is known for how easy it is to peel. The papery outer skin slips off cleanly, revealing large, deep-colored cloves that are genuinely a pleasure to prep. Bold, classic flavor with straightforward prep every time.
Flavor
Classic and robust with a mellow, earthy heat that builds gradually. Ukrainian Red has a depth of flavor that grocery store garlic simply cannot match. Complex without being aggressive, satisfying without being sharp.
In the Kitchen
Outstanding for roasting. The large cloves caramelize beautifully and the flavor deepens into something almost nutty. Also excellent for sauteing, stirring into sauces, or pressing raw into dressings. If a recipe calls for a lot of garlic, this is the one to reach for.
Growing
Ukrainian Red thrives in cold winters (zones 4 to 7) and is well-suited to Pacific Northwest conditions. It produces a scape in spring. Remove it for larger bulbs. Plant October to November for a mid-summer harvest.
Storage
Stores 4 to 6 months in a cool, dry, well-ventilated space. Rocambole varieties have thinner, looser skins than porcelain types, so handle with care and use within the storage window.
